I have a few Nikon lenses for which I'm looking to purchase a Nikon DSLR in the future

Items include 50mm F1.8, 50mm F1.2 and 105mm Macro F4

All items are old 1980s I would guess.

I spoke with someone today who said I need a minimum D200 for metering on manual lenses?

Is that true? If I were to get one, then can I use these lenses in Aperture priority mode? so set the Aperture on the lens instead of body and focus manually obviously.

Most of the semi-Pro bodies (D200 and above) have a "Non CPU lens" option - you just tell it the focal length and the aperture and it all works.

I love this feature and it breathes life into "old" - but oh so good! - lenses from a previous era!
 
I wouldn't have bought my S5 Pro if it didn't - use it with Tamron Adaptall-2 lenses.

I have a full set of Nikon Primes you see

28mm F2.5 wide
50mm F1.8
50mm F1.2
105mm F4 Macro ( can be 2x to 210 F8 macro)
300mm F4 AF ED (can be 2x)
80-210 F4 Tamron zoom
SB 16 flashgun - not sure if this will work with anything new though

Not having a Nikon DSLR doesn't seem like an option lol

It would nicely complement my Canon kit which is large as well
