Hi am after a bit of friendly and impartial advice. I currently have a Casio Exilim Ex-F1. Whilst a good fun camera with lots of high speed burst capability, it's time to get more serious. I have my eye on the D7000 any thoughts?.... Should I be looking at Canon?

You should be looking at everything that is available to you. Go to a store play with some cameras that are within your budget.

Get your budget first though and make sure that it can fit in at least one decent lens to start you with.

For the D7000 I'd budget in an extra 250£ for a 17-50 Tamron at the absolutely least. If you can't stretch to that then look for a less expensive body as lens make a lot of difference.

On top of that it might be good to think why you want a DSLR what benefits you are trying to realise, are you ok with the bulk or maybe you are better off with a mirrorless camera or maybe even a higher end compact?

The D7000 is evidently a superbly capable body from what I've read about it, but like others have said, it's worth trying all the available bodies from nikon/canon/pentax/olympus/sony, because with a decent lens and a decent photographer behind them, any of them will produce stunning image quality.
Depends on what you shoot. If you (for example) shoot landscapes all the time, a D7000 might be a bit overkill, where you can get a D5000 and put the difference towards some good wide lenses.

We are splitting hairs I know but for landscape work you might appreciate the extra DR of the D7000 I guess?

Since I currently have a lowly D40 I cannot speak with any authority on the subject though :)

Thanks peeps, I still haven't found my niche yet, love macro work, landscapes, nature and recently did a studio portrait course which I now have caught the bug for. Will have a budget of around £1,400, more if I decide I can get by with one kidney :-). But seriously am looking for a camera with better resolution, currently have 6Mpix with lots of features and after playing with a few the D7000 has really caught my eye

I would say to buy a mid-range camera along with a really good lens for macro, landscape and all you want, rather than buying a costly body with just one lens. The camera you can consider are Canon 600D, Canon 60D, Nikon D5100 (just releases) along with a wide-angle 10-24mm lens.

The D7000 will be a great all round camera for all those applications.
Just make sure you put some nice glass on the front to make use of all those glorious 16million pixels

Do you reckon the d7000 make a bit of a mockery of the 50mm f1.8 AF-D I have left? Flogged all my Nikon kit apart from this lens as I love how sharp/contrasty and fast AF this is. Was about to go red instead of yellow, but I'm now thinking d7000 could be the answer as I love the Nikon controls.
