Using a D700 and SB900

If I use TTL or TTL-B the camera sets the shutter speed to 1/60 and there's no option I can see to set it faster.

That's fine if the flash is providing all the light, but if there's a mix of ambient and flash, I really want a higher shutter speed (say 1/125) to avoid blurring due to camera shake.

What am I missing here?

camera Nikon D300 menu e1 = flash sync speed 1/320
SB 900 flash =m1/128

Patrick, your flash sync speed is set within the menus of the D700 and it's default is 1/60 sec. If you set you camera to AV the shutter speed will default to that shutter speed. As has been by Mike and Michael above, use the camera in Manual (you can use both TTL or TTL-B on the flash). Set your shutter speed to whatever you want, to control the ambient light, up to max sysnc speed, and then use your apperture to control the flash exposure. You'll get good results if you play around with this.
