I think something like a used Nikon D40 or D60 with 18-55mm and 55-200mm kit lenses would cover most of your requierements, and they come very cheap via ebay too. I'd also invest in a tripod.
Both of these camera's have excellent auto and scene modes, and when you get better you can start using more of the manual modes.

Any Nikon, Canon, Sony, Pentax or other brand DSLR is a good place to start, shop around for a package that includes a dual lens kit up to 200mm or 300mm..
Pentax and Sony have image stabilisation in the body that might help with the wildlife, Nikon and Canon have image stabilisation in the lenses - that may not be in a kit package lens you get with the camera. Depends what you get.
additionally - go to a shop and pick up a couple of cameras first, you might like one over another - there's really little technically differrent between all the budget DSLRs.
