Not sure if it will be but the website below might be of some interest/help. I'm afraid I can't give you any personal advice as I myself also struggle balancing flash and ambient light.
The last picture you posted doesn't look bad too me though. I'm sure it could easily be adjusting by keeping the same exposure settings for the background and just manually dialling down the power of the flash.....could be wrong though!!.

The Foreign and Commonwealth Office are currently advising against going. All of the problems so far have been centered around a popular tourist/shopping area of Bangkok, however due to the tense situation they are saying it could spread to other parts of the country....fingers crossed it won't
I would check things like travel insurance as I'm not sure it is possible to get insured at the moment? Are the example pictures from Pattaya?

You seem to have a grasp of what needs to be done, and how to do it - especially the flash exposure locking bit Just a bit of practise needed.
On the image above, I would be very happy to get that kind of result in those circumstances. You could fiddle about with ratios and gels and stuff and make it 'different' but whether that would be 'better' is kind of personal opinion.
