NEF files turn to xmp files after editing.

I admit, I have been a firm user of the jpeg setting rather then RAW but recently started using RAW and have now been experiencing some problems. I use Lightroom 4, Photoshop CS5 and occasionally Corel PSPX2 - when i open the image another window opens with the options of correcting brightness etc .. once i edit the image and save it as a Jpeg the original unedited file is converted to a xmp file and is no longer accessible. Is it me that is doing something wrong or is this how it is shooting in RAW?

You still have the original nef. The xmp is a secondary files carrying the changes you made in ACR etc. It is known as a sidecar file. If you delete the XMP then next time you open an image you are back to the original nef before pp.
 
Or you could turn it off,

Lightroom 4.

Catalog settings, > Metadate Tab, > Automatically wright changes into XMP > Untick the box.
 
If you convert all your RAWs to DNGs, then that xmp data is written to the DNG instead, and there are no multitudes of xmp files created. So there are no xmps to lose, or manage alongside the RAW, like moving or renaming.
