Need sim only advice

So I was released from my account with EE today after they acknowledged they cannot provide a good service in my area due to mast issues. So I now have my PAC code and my iPhone 11 Pro so no need for a phone contract. o2 seems to be popular around here (I’m in a village in Essex, and the signal is very intermittent) GiffGaff get good reviews but don’t support WiFi calling which I need at home.
I’m looking for 20GB data and unlimited everything else. Any suggestions? Is it true some speeds are throttled on sim only plans? Or is that an urban myth? Looking for a 12 month contract

I have always been happy with O2. Whilst we were in France last year I needed to up my data allowance to use my phone as a hotspot to watch films etc. They were brilliant my data allowance was upped twice in 2 weeks and I never noticed any throttling. I have been on sim only for ages. When I got home I dropped my data allowance back to the old allowance, all without any issues at all.

FWIW I have a PAYG sim and have been happy with them as the cheapest PAYG SIM I could find at the time and AFAIK no one has ever bettered it.

In regard to the WiFi calling I have never installed it so cannot comment about how good it is???

WhatsApp users would have no problem sending to you, does your signal preclude receiving normal calls?
It does yes. The signal is so poor here that Wi-fi calling is a must

Never gave Sky a thought either. Wouldn’t direct with o2 be better? Or do sky subsidies?

O2 do not throttle their SIMO plans. You also get 14 day change of mind if you find it doesn’t suit you.

I don't know Sky specifics but they do wifi calling on o2 ... I'm with GiffGaff.
