Monochrome

I always shoot in colour and RAW and convert in on the PC afterwards.
 
I don't have any pp software, other than the fix tool on vista, so I tend to shoot straight into black and White. Even though I get slapped wrists off my photography teacher... Lol. I look at it as if you know what you've got... You can take the picture you can then see straight away what sort of thing you have... However shooting in raw and processing is most likely to be better if you have the software.

I would agree that shooting in colour then converting is the best option. This way you have multiple options as to the conversion, either using the simple "Convert to Greyscale " or using Channel Mixer , type controls or the Photoshop's advanced B&W tools.
 
Your sig says you are using 5d Mk2. Use the Canon DPP software that came with it. Alternatively....as the Mk2 does live veiw, you can switch to that and BW mode, and work through the different built in colour filters to see which works best for your subject. If you have the time though, RAW wins hands down every time....

Of course it is possible to set your camera to take a colour RAW and B&W jpg at the same time. Best of both worlds.
