Yes
I have a Canon 7DMK II and sometimes it takes time for photos to write with a 120 mb/s card (this is shooting raw, insects and birds lots of photos).
Would (and I guess yes) a 160mb/s card make a big difference?
Any good places to buy one in the UK?

Like for many things, "capacity" is only one feature.

Among other features is the "read/write" speed of a
given card. Your camera manual will recommend a
list of features a card should have to optimize your
camera operations.

Do some serious checking before you spend on faster cards, the chances are the camera cannot match the speed of the cards you have.

This may help.

It's possible the cards write speed won't increase that much from a 120mb/s to 160mb/s card 'upgrade'.

Camera setting can also impact speed transfer. The RAW type and size, if it's RAW and JPEG, if you are writing to both cards as backup with a slower second card, number of continuous shots taken, time allowed to let the buffer clear between bursts, all of these could cause potential slow downs.
