I've got a Linhof Technikardan 23 and a Leaf Aptus digital back.

I've just bought the (massively expensive) adaptor plate for the Linhof but obviously the ground glass on the camera is for 6x9 whereas the sensor on the back is 48x36mm.

I would like to make my own mask and wondered what you thought to this plan:

1) Remove the bellows
2) Mount the digital back with a sheet of very clear plastic lens side of the back (I'm thinking of something like an iPad screen protector)
3) Mark the plastic with a permanent marker around the shape of the sensor
4) Remove the marked plastic
5) Insert it between the ground glass and the fresnel

Have I missed anything? Is there a better way? Is it a stupid idea?

Just so I understand correctly... You're removing an area of the plastic the size of the sensor itself, and then mounting the remaining plastic sheet on the inside of the ground glass? Unless I'm missing something, how will this act as a mask? (I understand a mask in this context to be something that constrains the size of the image on the ground glass to the size of the sensor)
