The Anker one will do the job the apple wont-you need a USB -C ( or the apple equivalent) on one end and an RJ 45 Ethernet on the other

Thanks for everyone's help, really appreciate it :) I did try to change the Xbox settings to those which were suggested but they already seemed to have those settings applied. I'm a bit clueless with this type of thing so I now plan to get rid of the Xbox (long overdue anyway as I don't use it for gaming) and get a smart TV instead, hopefully that causes no connectivity issues

did you check the Mac settings as well?
