I took a photo of my daughter and put it in black and white. I would like to keep her eyes blue though and I am new to editing so don't really know what I am doing. Is it easy to do?

It's called "selective colouring" and there are lots of tutorials out there. This one comes from Adobe themselves.

Edit: Forget that last one. It uses ACR, not Lightroom, despite saying "Lightroom" in the title. Try This one instead.

However, the way I would do it is to slide the Saturation slider all the way to the left then use the Adjustment Brush set to 100% saturation to paint over the blue part of the eyes. If that isn't colourful enough you can click New to get a new Adjustment Brush set to 100% and paint over them again. If the Adjustment Brush 'pins' get in the way, you can press 'H' to hide them and then again to bring them back.

If it's a small area I'm painting over I usually do the first 'click' off to one side to set the pin out of the way. The adjustment behind the pin can be erased later but the pin will stay in the same place. :)
 
Quick way

Using the local adjustment tools brush, set the Saturation to zero. and using a large area brush paint over the whole area. Make sure you turn off "Auto Mask".

Now depress the alt/ option key, this gives you a "-" sign in the center of the brush. You may want to reduce the size of the brush to suit the area you are working on . Now simply go over the area you want to restore as this removes the "Zero Saturation" you have applied
