I'm trying to encourage my partner to use Lightroom rather then the PP package she uses at the moment. Is it possible to import ONE jpeg from a folder. LR seems to pick all the images from the folder rather than the one she has clicked?

Yes , you have can tick the image you wish to import, the default is all the images are ticked but click "uncheck all" at the bottom of the import window and then tick the one you want.

Yes, as explained above. You can also select a sequence of images ([Shift+click]) or various images ([Ctrl+click]).

Various other tricks are also available like adding keywords during the import process or a post processing setting (call preset in Lr). Adobe does a free 30 day trial.

Thanks. I'm trying NOT to set up a catalog for her at the mo until we have been on holiday and can set things up in an ordered way. What I didn't realise at first, was that when you click on an image to edit it in LR, all the images in her PICTURES folder, appear on the left hand side.
I'm still learning too.

She could just drag and drop the image into lightroom rather than using the import dialogue

Or... copy the image into a folder then synchronise that folder.

Agree with this - on a PC the easiest way to add just one image is to drag the file onto the LR icon on your desktop. This will open LR program with the image automatically selected in the library ready to work on.

That's a great tip and I'd no idea one could do that.
