Lighting difference - Camera settings

I work for the engineering team of a popular UK retailier and we are currently rolling out LED lighting across our whole estate. This is still in very early stages and our supplier trials are set up and ready to go - although my manager has asked me to put together a 'before and after' kind of thing, comparing the old fittings to the new LED..

I have an issue where the difference is clear to the human eye but with the camera there is none, I have no experience in photography, except for the few weeks I did in A-Level art - but I expect there would be some settings that I could manually input for the camera to pick up 'true-to-life' colours? ISO, white-balance?

Any help with this would be appreciated. :)
