my photos are coming out really light in colour and my whites are really bright white. I keep my white balance on auto and mainly use my av settings. any ideas.
 
Post a picture with EXIF then we can see the problem.
 
Sound to me like the images are over exposed.

Once you've taken a picture in AV mode, check the settings the camera used and switch to full manual and increase shutter speed and/or aperture and see if that improves things.

If you were taking a landscape shot and focusing on dark foreground, the camera would set the metering so the foreground is exposed correctly, if it's a bright day it would mean the sky or any other light areas would be very bright/over exposed.
 
Probably due to the meter overexposing for the dark areas but without a sample image, then I an guessing. Have you tried bracketing plus/minus?

Then again, are you talking about the image you see on the screen on the camera, or on your PC/Mac ? If you have not caliberated the monitor, images do look different if the monnitor is set to factory settings.
