Having no clear subject area I like to shoot, I have all the lens I need, from 18mm to 500mm, including a 50mm prime lens (which I love). I'm looking for lens less than 18mm, probably fish eye, but unsure which one to get. Also seen some great Sigma lenses and being a NIKON fan, ; how do people rate them? Can you recommend any lens that are worth looking at?

I don't know much about Nikon, but Sigma 10-20mm f4-5.6 is quite popular. Tokina 11-16 f2.8 is more costly, but very well reviewed. I'm thinking about getting the Tokina myself. I'm assuming you are using a crop sensor camera, correct?

I used to (and still do) have a Sony a700 and a few different lenses which I particularly love 70-200mm f2.8, 105mm macro and my 50mm. But as I have now moved onto a Nikon I am having to get new kit. I have a 28-200mm lens which seems to be a good all rounder, but any suggestions for another good lens (bear in mine I take a lot of equestrian photos, but I love scenic too)

You probably don't want a fish-eye, but something around 10-20mm, as suggested above. Depends on your budget but preferably something with Nikon written on it, or work down from there.

28-200 is an older design originally for film cameras. Nikon 18-200 would give you more at the wide end for scenics, if you like the all-in-one solution.
