Jumping back in... A7, X-T1 or something else.

I think the best compromise including size/weight advantages over a DSLR would be the following:-

Sony A7
Sony Zeiss 35mm f2.8
Sony Zeiss 55mm f1.8
 
I've not read all the posts so apologies if this is repeating. For ultimate IQ get the A7. However, as you mentioned in your first post size and weight are a concern. Whilst the A7 can be a light setup with a small prime, when you start using zooms the difference in size and weight between an A7 system and DSLR gets much closer. The A7 is full frame therefore the lenses have to cover the full frame image circle and therefore will generally be large. Fuji is a nice system, however there's the controversial subject of artefacts which I'll leave you to look into if you choose. Another good option is the Sony A6xxx series, APS-C sized sensor, great AF and Sony have most lenses covered. They're not weather sealed though (at least not the earlier ones), they don't look great imo (if that's important to you ;)) and I don't find them comfortable to hold. Of course YMMV.

The m4/3 system is excellent. Yes there's a slight drop in IQ, and yes they don't handle noise quite as well as cameras with larger sensors, but they really do stand up well, are really nice to use (well Olympus are, I've never tried Panasonic so can't comment), and AF is great as long as you don't want to shoot fast moving stuff or shoot in the dark. I run an Olly setup as a lightweight alternative to my D750 and I'm happy with the images it produces. Get the EM1 or EM5-II with the 12-40mm f2.8 pro lens and you can get caught out in heavy rain and not worry, the weather sealing is excellent.

In the end my partner's MOT failure hampered my budget slightly(!) but I managed to find an excellent deal on a Fuji X-E2S, 35mm f1.4 and 18mm f2. Had them for the weekend and more than happy with my selection.

Looking to round out my gear with a Fuji 60mm macro when funds allow.
