Is this an EF or EF-S mount?

It's an EF mount but is specifically designed for crop sensors. It would be okay on your 50D but would cause severe vignetting on your 5D.

That lens is now Tamrons reference lens instead of the 28-75 which I've just got and is amazing for the money.
 
For Tamron they have Di for full frame (typical EF) and Di II for crop bodies typical EF-s).

Sigma uses DG for full frame and DC for crop bodies, but I don't have a clue for Tokina mounts I'm afraid.

I wish Tamron would do their 18-270 PZD in a full frame mount, it looks very good IQ for a superzoom and I'd love one for a 5D3, but there we go. I'll have to save up for the Canon 28-300 L I suppose.

So theoretically, without damaging anything, I could mount this on my 5D and crop the edges?
 
Yes you can use it but it'd be more than just edges you'd need to crop.

Quite some time ago someone posted a full frame shot taken with one of these on another forum and I was surprised how small an image it provided.
 
If it helps, i have the Tamron 10 - 24mm Di11 which i tried on my 5d and i could open it up to around 14mm maximum and still fill the frame. Beyond this vignetting would become visible, so i guess i could use approx 2/3rds of the zoom range on a full frame body. Im guessing it would be similar on this lens letting you use about 28-50mm, of course this is just a rough guess based on my experience so i could be way out.
