No
First, excuse my ignorance here because I truly don’t know. I’m reading yes and no from the many, many forums out there.

Lenovo TBX-505L android 10.

I want to use it for security camera and wildlife cameras. And two sport apps. Any apps would be from the googles play store. As this is about 7+ years old is it still safe to use with my Google account?

I think there could be an issue with apps not being compatible.

I have a Pixel 6 and a Pixel 10 both running the latest Android 16, there are apps on the Pixel 6 that will not download from Google Play store on the Pixel 10 as they are not compatible with this device.

That’s absolutely fine if they don’t work on it. I’m wondering if it’s easier for someone to hack into it as it’s an older tablet

No, it doesn't make it easier for someone to hack into. The main risk security wise installing apps through the apk directly (known as sideloading) so you need to be careful when downloading apks that you trust the source.

The main issue with older Android devices as mentioned above is that increasingly apps won't be compatible.

If you're worried (and I think in your use case, the risk is miniscule) then maybe consider a dedicated Google account for it. You need one to access the app store but they are quick and free to create.

In the very unlikely event that somebody used this as a vector to your Google account, they don't get anything worthwhile.

I have done what you have suggested.
