image conversion

I want to convert an image into black and white, but keep some of the objects in colour, similar to what they did with the sunflowers in calendar girls. How can I do this in Photoshop 7?

Easiest way in most programs is to select / mask the bits you want to keep then de-saturate the bits you want B & W
