Technically speaking you can't really. You should adjust the dev times but most negative film can handle a stop or two either side while still giving an image, but it won't be the same as developing as if it were shot at ISO400.
It's a spectrum ot acceptability - much in the same way that hyper focal focussing is what would constitute acceptable sharpness, rather than critical sharpness.
