How many exposures and how many stops for HDR

Just wondered how people tend to do their HDR photography? I tend to use three exposures ranging from +2 - to -2. What do other people tend to use? Is there any advantages of using 5 stops?

Also, what software do people prefer for more natural processing? I like dynamic photo, because I get a massive amount of noise with photomatrix :(
 
As many as it needs.

Could be 3, could be 5, could be 12+.

There's more than a few threads asking the same question.
