Could anyone please enlighten me on the practical use of these?

I have seen that they are more and less dense in structure and come in varying degrees but how and why would you use them practically?

They are used in the studio to control the direction of the light. For instance if you are doing a low-key shot and want to have a hairlight (shooting back towards the camera)the honeycomb could be used to get the light where you want it. The construction of the honeycomb will prevent the light spreading out and possibly causing issues with contrast or flare. With a mid-key backdrop they can be used to show seperation between the subject and the background by lighting sections of the background.
