Can somebody please explain this:

It basically says, focus on the torso, in AI Servo mode, take the photo, even at F1.2 and the eyes should be in focus as 'generally' you'll be at the same distance.
Now - I must be missing something as if I don't absolutely nail the focus shooting at F1.2, then it's out - i.e not in focus.
Can anyone shed anymore light on it?
