A lot of food photography is fake too, tale a look at those jucy roast chickens etc in magazines, they are raw birds brushed with marmite. A lot of things shrink a little when out of the oven, thats why they do this, think they apply some treatment to most other magazine foodstuffs.
 
Under cooking the food is common. (Example is a cooked piece of meat sitting in a puddle of grease or a slightly less cooked glistening piece of meat)... they say light is important but equally is shadow... I see a lot of symmetry in food pics. A small hand fan will give just enough air to help create steam.
