I want to try to do hdr with single shots (varying the exposures etc and re-saving to create the different layers). I have been looking at some You tube tutorials but most are hard to follow and the techniques vary to say the least.

Can someone please point me in the right direction?

What you need is a program like photomatix. It will HDR your single shot.

open up the original image twice in photoshop one for each HDR version.
Put your HDRed picture on a new layer on top
Adjust the opacity till it looks good* I have found about 20% works a lot of the time.
pick the best out of the two

*if any part of it is glowing then it does not look good
Never ever B&W convert a HDR picture if it glows, it will not fix it.

Sorry, I forgot to mention that I only have Photoshop CS4

Any ideas?
