Understanding Exposure by Bryan Peterson taught me more in the first couple of chapters than anything else I've read.

Do you have any specific interests in mind? Understanding Exposure is good. I enjoyed 'Photographers Eye' by Micheal Freeman as it gives some nice ideas with regards to composition. I have found this useful for reference purposes when composing a shot with time on my hands. At the moment I am looking at 'Digital Landscape Photography' by John and Barbara Gerlach - An enjoyable read.
