Hi which is good software for focus stacking pc/mac
 
Photoshop?

I have used Photoshop for stacking - very simple process.

Photoshop has a built in tool under File>Scripts>Load files into stack.

Once files have been loaded into the stack you can use Photoshop to blend the layers:

Edit>auto blend layers> select stack images, click OK.

Photoshop will then work its magic automatically determining the sharpest points of each image and blending them together.

Simples :)

Thanks for the quick tutorial on post process.

What about taking photos? how do I know how many and how much of focus ring I need to move?

It depends what you are shooting. Landscapes, macro etc?

For landscapes, for example, you would probably only need 3-4 images - taken across the range of the image.
