I am having problems printing a panoramic image 30"x11"
I select custom size paper and the image prints about postcard size after running about 16" of paper through.
Ive tried all sorts and using too much paper .
im using roll paper and printing through photoshop cs5..
any ideas welcome .

If you open a 'New' document 30"x11"x360ppi you will be starting with the actual size you are trying to print.

Now drag your image into it and see were it sits. You may find you have to re-size your image to print at 30"x11".

Have you set the correct size in the custom
Menu as it does not give it in full
Inches or cm.

Correct. If you want a 16" edge you set it in hundredths I think 0.01in - so 1600 is the figure you enter.

I have over compensated on the paper size a good 5" all round
but still happens?

I thought I had this wrong even used a size convertor to be sure as its in mm
but alas still not worked .... ?

Can you take some screen dumps of the printer driver settings and post them here
A link to a dropbox file would be great

Also can you confirm the size of the image in pixels?

got me the first time I did a custom size

And me - I think I had the 0.01cm button checked - I'm taking it that the Epson R4800 is a little similar to the other Epsons but I might be wrong - That's why the screen shots of what he's doing would help a lot.

Just a point, I would not bother setting my image to 360ppi - total overkill. For a 30" print I'd be nearer 180ppi (possibly less)! Don't resize the image unless you absolutely have to.
