Looks like I'm going to have to go to Dubai for a weekend at the end of the month. I've been browsing the web but I haven't a clue where to stay or where to visit. Can anyone recommend a reasonably priced hotel (3 or 4 star, preferably with a bar) that's close-ish to the airport and places worthwhile visiting as a photographer?

I was there a few weeks ago and just stayed at the Holiday Inn a stone's throw from the airport. It had a decent enough bar and was generally fine.

What sort of photography do you like? I'm a cityscape, landscape sort of person generally and I found the Marina area perfect for this but the fountains in front of the Burj are well worth a look too.

I had to exhibit at a trade show there a few months ago. As the exhibition was at the Dubai World Trade Centre I decided to stay somewhere local to that and chose to stay at The Apartments, Dubai World Trade Centre. The apartments were just fine and it was very convenient for the trade show.
However, a lot of the restaurants in that area were way over-priced.
The best food that I had there was Lebanese - excellent!
Of course, none of this makes sense unless your trip is based around the World Trade Centre.
