I obviously don't know how often pilots let the planes land themselves, but from the experiences I had as a jump seat passenger whilst working for an airline, the only time I ever recall a pilot using the automated system was when we were landing at Stansted Airport in heavy fog one evening on a flight back from Venice. Every other flight (out of literally hundreds), I always witness the pilots landing the plane themselves.
As I said, I don't know what the situation is like now, it was some 15 years since I worked there.
