Good question actually. Obviously you have the option of the different Picture Styles if you shoot jpegs. I reckon the progression in Digic processors makes a difference to 'out of the camera' colour. On the other hand, if you shoot RAW it's probably pretty academic as you have so much leeway at your disposal with the processing.
Hmmm, didn't a member do a test/comparison with a 5D, 20D, 30D and 40D last year? It was very interesting as the differing tones and colour interpretations were quite apparent, I'm sure it was on here but I carn find it!
