Curves

I keep hearing curves being mentioned everywhere. Anybody able to explain curves and how they're used in editing? I've played around a little in PS but I'd prefer to understand the theory a little if anybody can throw some knowledge at me!

Ta. Some of those were quite handy. I'm still a little confused but practice might make perfect.

I've written a small blog post which shows how I used curves to lighten an image and boost the contrast if that helps.
