Compositing 2 photos into one

I'm about to do a shoot where I'm shooting 2 shots of the same person and want to composite them both together. My concern is the after print. Do I need to worry about the way I shoot it as in portrait or landscape. What I'd like to do is have both bodies side by side in a portrait. Is it just a matter of shooting both in portrait and chopping out the background on each photo and creating a new same size portrait and adding the two cut out bodies.
Is there anything else I need to be aware of when shooting.

If it's just 2 of the same person in the same shot, why do you need to cut out the background? Just lock the camera off on a tripod so nothing moves, and and so long as the lighting or camera hasn't changed, it should be easy to joining both images together in layers.
