how can you extract all the colour out of an image and leave all the lines there?

If you mean something like a line drawing (see pic) the filter/sketch/stamp does a reasonable job.

I'd think myself lucky... we have a dyslexic tatooist in my area, and that not a good thing .

Actually there is some ajustment with this filter, but it's going to vary image from image, if you want to post yours we'll see what works best.

Filter/stylize/find edges then image/ajust/threshold.
