Lots of these growing near to me. Easy pickings so I wondered if anybody had any ideas in terms of nice recipes or what to do with them ?

Good olive oil, a frying pan, a little seas salt.
Sautee them and then pile them on a doorstep of toast with real butter. On thier own.
Heaven.

If you do, then just a tiny bit.
Those bad boys are tasty enough....adding too much of anything with ruin thier flavour.
I'm so jealous lol.
 
I like most 'shrooms gently fried in butter rather than Olive Oil. I would also try them "straight" before adding any garlic. Good wholemeal bread, gently toasted...

Fresh mushrooms are at a premium here (Crete at the moment) but we were chatting to a friend who has a fresh veg shop here and somebody refused to buy fresh mushrooms (which look lovely!) because she wanted canned... (bleurghhhh!!!)

No resemblance at all to the DA mushroom :lol:
 
I'm still alive folks !

Change of plan....

Cooked them for a few mins in a little olive oil, garlic and thyme.

Tipped into a pot then popped into the oven.

Seved on the side with Venison

Lovely

yep - its too deer to have often :lol:

(actually I had it last week stewed with shallots, redwine and baby mushrooms)
 
Chanterelles are very good friends with risotto I think, crisp up some lardons, lightly sautee the chanterelles and add to risotto with white wine.
Or something like that. Yummy though
 
I'm fortunate when it comes to venison - gamekeepy circles etc.

I was a bit rough but I'm pretty sure that was the wine.
 
Yeah defo butter not olive oil. If you want a little garlic leave it whole so you can dig it out before serving. Finish with frash parsley.
