Most interchangeable lens SLR's will allow you to change the lens whilst the film is covered by the shutter (cant think of one which doesn't?). I'm of course talking 35mm SLR's. Might be a different story with some MF or large format cameras.
Providing you dont poke around in the body cavity, then there wouldn't be a problem.
By the way, this is one huge advantage a film SLR has over a dSLR
I can't think of one where you can't myself.. but we're all assuming it's a fairly regular camera that's being discussed. Assumptions do not make for good answers.
