They don't go anywhere.
When you "delete" something you simply remove the pointer to where it's located on your hard drive.
Provided you DON'T write anything to the drive, the file can be recovered, as you have found out.
IF you save something to the drive in the meantime, it MAY overwrite the data that you want to recover.
(This also applies to memory cards.)
