Camera date for LR.

Mine's still set on default because I don't used year/month/date folder structures.
All my photos get put in a dump folder. From there I "add" to LR (rather than importing from a card). I then curate down to the keepers and move them (in LR) into the 2018 folder which contains subfolders for different types of work.
LR can sort by date captured and it just sorts it by date - doesn't matter what order it's in. As long as the date/time is set right in your camera (whatever format) it doesn't matter. I didn't see an advantage to having meaningless date type folder structures other than a top level year.

Yes ... Lightroom is set to import to Year/Month folder structure. I often will move things to a Year/Occasion folder if I feel its appropriate but thats manual.
