After a little advice, I am looking for a backpack to carry the following.

Gripped Canon 7D
24-105
10 - 22
100 - 400
Various release etc.
Manfrotto Carbon Fiber Tripod
Snacks and Drink bottle

I am starting to do more hiking and want to carry all kit on back for the long walks.

I've a Lowepro Mini Trekker AW and it should fit your kit in.

I think the Lowepro Pro Runner is the new model of the Mini Trekker. Have a look on Lowepro's web site and it'll give you sizes etc...

My only question would be do you really want to carry all your kit with you on a walk / hike ?

Tamrac also do some nice backpacks, but the one I had felt a bit bulky - very good quality and padding etc, but a bit bulky...

Crumpler do some nice ones, that don't look like a photo bag, but they do carry a price and there not quite as flexible, but do look nice.

Suppose it comes down to what you're after from a backpack...

Cost is not really an issue, I am always happy to pay good money for something worthwhile

I can thoroughly recommend either the Lowepro Vertex 300AW or the Lowepro Pro Trekker 600AW. Both will hold your current kit comfortably but the Pro Trekker will also hold the same amount again as it is huge, without looking ridiculous imo.

I also know the Tamrac Expedition 9x will hold a lot of kit but I cannot pass opinion as I have never seen one in the flesh so to speak.

Lowepro Pro Trekker 300AW is about as big as you need and will protect your kit very well with lots of space for other things, But it is a heavier bag than the likes of there flipside bags.
 
Think Tank Streetwalker series are grand.

I think I'm up to around 4 bags now and need another one for my new larger equipment. The thing I have come to realize is that a bag with a lot of pockets is not necessarily the best choice. I think I would much rather have a bag that opens and gives you access to everything inside one compartment with dividers. I'm just tired of opening many separate departments to get my stuff. It just seems like a logical way to carry my things so I think my next bag will be a one door bag.

I enjoy hiking into the forest taking images of rallying and have worked my way through a few bags. This bag is brilliant well constructed, comfortable and adaptable.
Essentially it is a rucksack with internal frame into which you secure an ICU (Internal Camera Unit), I think that is what 'ICU' stands for.
Having only recently purchased this I took it on its first outing into Kielder a few weeks back. Packed with 40D, 70-200 f4, Extender, monopod , folding stool, waterproofs, water bottle, flask and sandwiches etc.
I must say I was really impressed.
 
I've been looking around for a replacement for my Rally 7 and have found the Lowepro Flipside 400 AW that would seem to offer easier access than the Rally 7. I'm only hesitating because I'm not sure that it will take my 10" tablet in a pocket away from the bodies and lenses.

+1, mine has been round the world with me on multiple trips for the last couple of years
