Yes
...do you follow the rider or the bike?

I tend to shoot whichever comes bouncing into my view finder first, but wondered if anyone else specifically shot one or the other.

I'd assume both would be best! However, someone is more likely to buy a print of themselves flying along the ground and surviving to tell the tale than one of their bike getting trashed I'd guess!?

That's pretty well caught. I've caught a few in my time, and gone with a mixture of the bike/rider, or both.

This one from today:

It fired up first press too!

Sounds like you are more of a crash magnet than me :D

The story is usually about the rider, so the rider... unless the bike fireballs or something.

rider will show more...unusual body positions

I usually just stand there with my mouth open then as it all comes to a stop I remember I have a camera around my neck

As above the Rider is the main item for the shot. You usually find that you get both in the first few shots then they part ways so you can get a good selection. The bike may bounce and smash but if you listen it is the Rider who gets a cheer when he stands up and walks away.
Also, after the actual crash follow the rider as he may get back to/on his bike which can provide you with a horrific looking crash from which you can show the rider actually carried on with the race.
