I've made the rookie mistake and have a glut of Courgettes...what does everyone do with them (recipe wise) as they all seem to have appeared at once.

I've been able to give 5 away, but i've still got 4 of my own.

Does anyone have any recipes for Courgettes!?
 
I tend to roast ours with a selection of other vegetables (onions, peppers, squash, carrots etc...) and a little garlic, olive oil and chilli.
Have them with some salmon and rice the night you cook them, then the following night mixed with some cooked pasta and tinned Italian tomatos. Lovely!
 
Not sure they freeze that well?

I would put them sliced on a baking sheet with onions and peppers and roast in a hot oven for 10 mins so they become chargrilled... you can add tomato too, and have with rice, pasta or just a side dish to meat or fish. You can also allow to cool and add to rice or couscous (or giant couscous) with some feta cheese as a salad or lunch.

In either the BBC good food or Delicious food mags, there was recently a recipe for courgette muffins (or a cake), similar to carrot cake. Try searching online at bbc recipes or uktvfood.
 
Chickens like them. Feed them to the chickens.

Or pickle them... mind you, chickens don't like pickled cucumbers.
 
I agree with roasting them. They are great drizzled with olive oil sprinkled with garlic and dried chilli flakes. Makes a tasty veg accompanyment (<if that's a word).

I had a glut last year. This year all me plants were eaten by slugs :'(

Had runner beans off the plot for tea tonight, slurp :)
 
Kolokithokefthedes - courgette fritters.

Thick coating batter (think onion bhaji) and stir in some grated and dried courgettes. Shallow fry in olive oil and serve with tzatziki. Also work well as the bread for a bacon sarnie.


ETA... How about some allotment swapsies? Maybe someone else on the same patch has a surplus of runner beans (or whatever you particularly like) and wants some courgettes?

my mum does these with grated corgettes and fetta cheese quished together, battered and friend, thems lovely!

Good in home made veg soup, then freeze the lot ready for winter :D

Ooooh, thats the pick of the bunch so far...

We've tried pretty much everything else, roasting, grilling, stuffing, soup...going to try a Chocolate and Courgette cake at the weekend, and may have to try that one as well! I do like my feta cheese.
