black and white tutorials?

Does anyone know where I can learn some better black and white conversion techniques?

I want to be able to change my images into black and white but have the effects shown in images like these:

The middle one is infra-red, and I suspect shot on a proper IR camera rather than post process, although you can get a similar effect.
What photo software do you have?

I have photoshop cs4 on mac. I've also got Aperture.

Ah right, i have a copy of that too but never used it yet. Is it easy to use?
