I've leant most of what I do in photoshop by watching youtube tutorials. I haven't found anything that I want to do that isn't covered.

PhotoshopUserTV is great*, as is just about everything KelbyMedia does. Have a look at KelbyTraining, some great classes.
A great free alternative, however is Phlearn. A huge bank of £FREE video tutorials up there produced to a professional standard.
