Ok, now I have my kit on the way, need a reasonably priced bag to carry the body and at least 3 of the lenses, PLUS some kinda smaller over the shoulder holster thing (forget the name) for when I just want to carry the body with lens attached?

I have the following coming:

Canon 40D

Canon 28-135mm IS USM lens

Canon 70-200mm f4 L USM lens

Tokina 100mm f2.8 AT-X Macro Lens

Tokina 80-400mm f4.5-5.6 AT-X Lens
 
Get a Lowepro Vertex. I have the 300 one which is massive but I carry a lot of gear. Take a look at the 100 or 200 one. Very good bag. Note that you will outgrow a small bag very quickly!
 
Spot on with the Vertex. I have the 200. Still a big bag and quite bulky, but holds a lot of kit.

I can tell yo this much - don't look at Crumpler Pretty Boy range, other than the XL size for days when all you want to carry is the body and a smallish lens

Lowepro MiniTrekker another option that would happily fit you whole kit in a backpack- Nova range worth a look too for a traditional shoulder bag, guess you'd need a Nova4AW or maybe a 5AW
 
I still haven't sorted out a large bag to carry everything in yet, partly because I haven't finished buying things (how I wish I had found a cheaper hobby, or just had a measure of self control!), so I could have a long wait!

But in answer to your holster question, I use a Think Tank Digital Holster 20 for my 40D (it will not be of any use though if you plan to use the grip) and even with the largest lens I currently have, a Canon EF 70-300mm, there is still plenty of room for a larger lens given the bag has an extendable bottom.
