Tempting fate I know, but now that Spring is in the air I am after tasty and healthy BBQ ideas from the good folk of TP

Obviously the obligatory steaks, burgers and sausages are always a tasty option, but my thinking is this: there is usually just me and my wife most weekends, and I don't want to BBQ/grill just a whole mass of meat, for health and variety reasons. So what ideas do you fair folk have for additional BBQ cooking options? It sometimes hardly seems worthwhile firing the old Weber up for just a packet of sausages or 4 home made burgers.

Sweet-corn (wrapped in foil with some butter) makes a tasty starter, so that is on my list. I recall that peppers can be roasted as well I think. And I was thinking of slow cooked/caramelised bananas (again in foil) as a possible desert.

Any other tasty ideas I can cook on the BBQ that won't just result in a plate full of meat?
 
I like chunky chopped onion, peppers, mushroom, bit of cayenne or paprika.. all wrapped in a too big for it foil parcel and slapped on the BBQ, 5 mins later add sea bass or your fave fish and finish cooking. goes well with rice/couscous..

or instead of fish try feta, it really works, serve with nice crusty bread(or make some basic flatbread and do them on the BBQ too), toms, cucumber, whatever you fancy.
 
With the bananas, cut a slit in them unpeeled and drop some chocolate drops in. Wrap them in foil and put on the BBQ for 10 minutes. Once done, unwrap, unpeel and drizzle with cream. Yum
 
Mrs Frac does salmon steaks marinated in lime and coriander olive oil, makes a lovely change from the obligatory red meat creations. Cook them in tin foil.

Fresh pineapple sprinkled with cinnamon and brown sugar (or honey) wrapped in foil is yummy too!

Soak non-stripped sweetcorn in water for a while (a couple of hours should do) then grill until cooked. If you've got the time and inclination, a whole spatchcocked chicken can be rubbed with spices (to taste) and whacked on there, turning frequently and kept well basted. Pork cubes on skewers (or any meats). Minced spicy lamb wrapped around wooden skewers. Hell, people have written books on what to BBQ!

Also, Marcel has the meanest BBQ sauce recipe. I could pass it on, but I'd have my legs broken for a second time. Ask him nicely though and he may share.
 
Fish! I've taken to buying frozen Basa fillets, stick them in the fish holder thingy frozen and whack it on the bbq, keep them moist by brushing on oil and herbs. Another option is to season the fish add a bit of butter and wrap in foil to cook on the bbq.
 
Get some smoking wood chips from your bbq supplier and smoke your food. Salmon works well.
 
I do a pretty mean chicken tikka, which is put on the BBQ. The missus doe a great lamb kebab, marinated in olve oil, lemon and rubbed in sumac spice, with salt and black pepper seasoning.
Get an old wok and put it on the BBQ, loaded with chopped onions, peppers, chilli and garlic, with tandoori masala and turmeric seasoning.
We love mackerel just seasoned with lemon, salt and pepper and wrapped in tin foil. Put it at the BBQ edge and slowly cook, then it tastes great.

As per my original post, any veggie/non-meaty ideas?
I am very carnivorous :cool: but as well as the meat of choice on the day, I would love to also be cooking other tasty tidbits on the BBQ to keep it company.
 
i turned our open top cast iron one (cost £5) in to a smoker - just put our wok upside down over the top.... i make my own mix of dry rub let it sit on meat for a while then cook and smoke at the same time fantastic...
 
We had a great BBQ on Sunday, as well as the usual Whole Chicken to be smoked and a couple of Large ribeye`s. I found a good wet fishmonger in Exeter. So I purchased a large fillet of Hake and some Scallops, I could not resist a few baby squid as well :love: There was also plenty of plain and chillie halloumi cheese which is great once roasted on a BBQ. I have a large stainless steel drum from a washing machine in the garden, that is used for the log fire and the Wok sits on top of it a treat for the times we do a paella.

I know several of the restaurants in town use their fish and know he works bloody hard to keep it well!
