So I have been learning about the exposure triangle and one of the things that has me confused is the aperture

You can change the aperture number on your camera. So say you put the camera on aperture 9 but if you are using the below lens with aperture of 5.6-6.3 . How does that work lens and camera ? hope this makes sense

The f5.6-6.3 are telling you what the widest aperture that lens has.
The widest at 200mm is f5.6 and the widest at 600mm is f6.3
You can set the lens, via the camera, to a smaller aperture (larger number) at any focal length, subject to the smallest aperture that lens is capable of
According to Sony the smallest apertures are at 200mm f32 and at 600mm f36

Thank you , so I couldn't have a 9 setting on this lens ( lens and numbers used for example )

I take it you could have a narrower/lower number eg 2 on this lens

You can have a larger number, see my edited post where I have put the larger numbers, smaller apertures. According to Sony the smallest apertures are at 200mm f32 and at 600mm f36
So 9 at any zoom focal length will be no problem
You cannot have a lower number, larger aperture, than the f5.6-6.3 as the lens itself is not large enough!

Aperture numbers are factions just written as single numbers.

So f2.8 is wider and considered a Bigger aperture than f9.

So a 200-600mm f5.6-6.3 lens can go to f9.
As noted the aperture values on the lens represent the widest maximum aperture that the lens is capable of. Also called "wide open" because the aperture blades don't shut at all.
 
Inside the lens is an iris that can be adjusted to vary the size of the hole (aperture) that the light passes through on its way to the light sensitive sensor or film.

For a given exposure time (shutter speed) a bigger hole allows more light through than a smaller hole.

The numbers used to indicate how big the hole is are called ‘f’ numbers. The smaller the f number the larger the hole and the larger the f-number the smaller the hole.

The number specified on the lens is the smallest number (largest hole) that the lens can achieve. In other words, on your lens at 200mm, the smallest number is f/5.6, and the iris is wide open. At 600mm, even with iris wide open, the smallest number is f/6.3.

Or written more correctly as f/2.8 where f is the focal length

So if the focal length is 50mm the aperture at 2.8 would be 50/2.8 = 17.86mm(ish) and at 5.6 would be 50/5.6 = 8.9mm(ish)
