For some reason swimbo decided to buy a 9.5lb turkey from the local butcher this xmas - theres only two of us , plus my mum for the big day

so far we've had

xmas day : Turkey

Boxing day: cold turkey and bubble and squeak

Yesterday : Turkey Rissotto

Today : Turkey curry

and tommorow we are looking at left over turkey curry for lunch, then cold turkey and jackets for tea

then the day after that a nice turkey soup with the carcase

Heartily :puke: of turkey - next year bi'm doing the xmas food shopping and I will buy a nice (small) leg of pork instead
 
Can't get enough turkey. I bought some more today. :)
 
She who must bought two turkey crowns this year - took us three days with all the family to eat the first so she cooked the other one and froze it:cuckoo:

By way of a change tonight, cos she has (:shake:) flu - KFC.........:gag:
 
turkey curry today, and that's the end of it (apart from the curry going in the freezer)
no more turkey sandwiches tomorrow. yay

I made a wonderful risotto today - having made gravy to Jamie Olivers recipe on Christmas eve (it really is worth the effort in my opinion, though I only used his recipe as a basis) I boiled up the bones with bay, a little cumin, a little chilli, oregano, garlic, celery and onion for a few hours.
Arborio rice fried in olive oil with a couple of finely chopped shallots, then a big glass of sherry, then slowly spoon in the still warm stock and the remaining gravy till just about cooked. Add either some cream cheese, fresh cream, the turkey, some peas, and return to the heat for a minute max. Leave for 10 - 15 minutes with a lid on to allow the whole thing to stand, get all creamy and delicious and finally chop some fresh basil or whatever herbs you have to garnish.
Totally wonderful, and totally gone despite making enough for 6 - my kids had thirds !

Now to work out what to do with the gammon - I love it cold but there was really no need to cook a 4 kilo joint for the 4 of us on Christmas eve though we did a good job devouring it.....

Dice it and fry it up in as hash with some pre boiled potatoes, onion, and white beans and sprinkle over grated cheddar while still on the heat... then garnish with some chopped chives and ground pepper to taste.

works well with pork as well
 
I roasted a chicken coated in a lemon and herb crust, this was cut up for sandwiches on christmas day as we set off to Scarborough after the presents. Boxing day saw a change this year, I decided on beef and it went down very well, with just a little left over for some sarnies. Did plenty of deserts though, christmas cake, spiced muffin, mince pies and a cheesecake! Still eating the deserts :lol:

finished out turkey yesterday ...looking forward to something different now :) ...glad we only have turkey once a year :D
 
we had duck and chicken and it was all gone by boxing day. sharing with a greedy dog helps tho
 
Aldi 4 bird roast for us - fed 2 meatatarians on the day and has kept me supplied with cold for sammidges since and finished it off as a curry last night.
