Advice re PC upgrade

Time has moved on and left my main PC behind, not suitable for W11 update and Adobe products complain about specs such as video memory and compatibility just get the feeling it is starting to struggle a little, I used to be happy building my own pc's but I'm getting on a bit and have got left behind a little, finding the current specs. for processors completely baffling.
So I'm looking for supplier recommendations and for advice to update the whole PC.
Initially I was thinking of updating parts such as Mobo, processor, ram and graphics but the PSU has done a good few years and I'm thinking a new start up drive might also be of benefit.
I have a budget of around £500.00 I am happy enough with the quality of my monitor, so looking for just a basic unit to edit photos and do a few work related jobs such as simple spreadsheets, word docs and online accounts.

Current spec.
Processor Intel(R) Core(TM) i7-4790 CPU @ 3.60GHz 3.60 GHz
Installed RAM 16.0 GB (15.9 GB usable)
Storage 932 GB SSD Samsung SSD 870 QVO 1TB, 932 GB HDD WDC WD10EZEX-08M2NA0, 3.64 TB HDD ST4000DX001-1CE168
Graphics Card Radeon RX 570 Series (8 GB), Intel(R) HD Graphics 4600 (113 MB)
System Type 64-bit operating system, x64-based processor
 
For £500 you might be better off with a refurb Mac mini with an M series processor.
 
Yeah at the price range for photo editing anyway the Mac Mini is going to out perform everything else and it isn't even close.

You would also be able to repurpose the hard drives into usb caddy's and reuse those.

I think I'm a bit long in the tooth to try and move to a Mac, I have never been comfortable using any of the Apple products that I've tried over the years for some weird reason they just didn't seem to fit with my logic.
So obviously I am going to have to increase the budget and sneak it past shmbo.
Where would you see the cost point at for something with usable specs or any links to Black Friday deals currently available
