Photoshop CS5 digital classroom by Jennifer Smith.
Photoshop CS5 for nature photographers by Ellen Anon and Josh Anon (one of my favorites along with Evening and kelbys, not just about nature)
Photoshop CS5 on demand by Steve Johnson (usefull for reference)
Photoshop Cs5 one on one by Deke McCelland (another good one)
Photoshop CS5 for photographers by Marting Evening and Jeff Schewe (very good)
Photoshop CS5 simplified byLynette Kent (good one for beginners IMHO)

As a relative newcomer to Photoshop I recently bought the Scott Kelby book.
Can't fault it at all, he explains stuff in simple terms which was invaluable to a beginner like me.
